Lemon Bars

Serves: (8 inch square pan )
For Crust:
1/2 cup - unsalted butter, softened
1/4 cup - confectioner's sugar
For Filling:
2 - eggs
1 cup - granulated sugar
1 teaspoon - baking powder
1/4 teaspoon - salt
6 teaspoons - lemon juice
1/4 to 1/2 teaspoon - Lemon Zest, to taste


PREPARATION

Preheat oven to 350º. Butter & lightly flour 8 x 8 inch square pan. Sift all SWANS DOWN Cake Flour, lightly spoon into separate measuring cups (1 â…› cups for crust and 1/8 cup for filling). Make Crust: 1 â…› cup flour, ½ cup butter, and ¼ cup confectioner sugar. Press into 8 inch pan. Bake for 20 minutes. Make Filling: combine all ingredients together, beating until well blended. Pour and spread evenly over hot crust. Bake 25 minutes. Remove from oven and immediately (while warm) separate bars from sides of pan with a spatula using up and down strokes to go around edges of pan. Cool completely for bars to firm; cut into squares and sprinkle top with ¼ cup confectioner sugar.
