Preheat oven to 350 °. Sift SWANS DOWN Cake Flour, lightly spoon into measuring cup for 1 ¼ cups + 2 tablespoons. In bowl, sift together the sifted flour, baking soda, salt and set aside. In separate bowl cream butter and sugars together, add the egg and mix well. Add flour mixture with the sugar mixture. Add coconut and vanilla. Bake 10-12 minutes or until light golden brown around edges.
